These crowd-pleasing mini sandwiches are perfect for weeknights, parties, or any time you want a bold bite-sized treat that delivers big on flavor with minimal effort.

Ingredients

Scale

For the Chicken:

  • lbs thin-sliced chicken breasts

  • 1 tsp kosher salt

  • ½ tsp fresh black pepper

  • ½ tsp garlic powder

  • ½ cup all-purpose flour

  • ¼ cup cornstarch

  • 1 cup buttermilk

  • 1 tbsp hot sauce

  • 1 large egg

  • 2 cups panko bread crumbs

  • Vegetable or canola oil (for frying)

  • 12 slices mozzarella cheese

  • 12 slider rolls

For the Bang Bang Sauce:

  • ½ cup mayonnaise

  • 2 tbsp Thai sweet chili sauce

  • 1 tbsp sriracha (adjust to taste)

  • 1 tbsp sugar

Instructions

  • Season Chicken: Pat chicken dry and season with salt, pepper, and garlic powder.

  • Prep Breading Station:

    • Bowl 1: Mix flour + cornstarch

    • Bowl 2: Buttermilk, hot sauce, egg

    • Bowl 3: Panko breadcrumbs

  • Bread the Chicken: Dredge chicken in flour mix, dip in buttermilk mixture, then coat in panko. Press crumbs to adhere well.

  • Fry: Heat oil over medium. Fry chicken 3–4 minutes per side until golden and cooked through (165°F). Drain on paper towels.

  • Make Sauce: Whisk together mayonnaise, Thai sweet chili sauce, sriracha, and sugar until smooth.

  • Assemble Sliders: Slice chicken into slider-sized pieces. Place on buns, top with mozzarella slices, drizzle with sauce, and serve warm.

Notes

Press panko crumbs well for crispier texture.

Chicken can be baked at 400°F for ~20 minutes on a rack if preferred.

Add cayenne to flour for more heat.

Keep sliders warm in a 200°F oven for party serving.

Sauce can be made in advance and stored for up to a week.
