Description

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 2 cups cooked white rice
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Season chicken with salt and pepper.
  2. Dredge chicken in flour, dip in beaten eggs, and coat with panko breadcrumbs.
  3. Heat oil in a skillet over medium heat and fry chicken in batches until golden brown and cooked through.
  4. Drain chicken on paper towels.
  5. Mix mayonnaise, sweet chili sauce, and sriracha to make the sauce.
  6. Layer rice, lettuce, cucumbers, and carrots in serving bowls.
  7. Top with fried chicken and drizzle with sauce.
  8. Serve immediately.
