-
½ cup (60 g) cornstarch
-
1 tsp (5 g) salt
-
½ tsp (2 g) black pepper
-
¼ tsp (1 g) garlic powder
-
¼ tsp (1 g) paprika
-
¼ cup (60 ml) vegetable oil, for frying
-
½ cup (120 g) mayonnaise
-
2 tbsp (30 ml) sweet chili sauce
-
1 tbsp (15 ml) sriracha (adjust to taste)
-
1 cup (45 g) shredded lettuce
-
1 cup (130 g) diced cucumber
-
½ cup (45 g) shredded carrots
-
¼ cup (10 g) chopped green onions
-
Sesame seeds, for garnish (optional)
Instructions
-
Coat the chicken – Mix cornstarch, salt, pepper, garlic powder, and paprika in a bowl. Toss chicken pieces until fully coated.
-
Cook chicken – Heat vegetable oil in a skillet over medium-high. Fry chicken 5–7 minutes, turning occasionally, until golden and cooked through. Set aside.
-
Make sauce – Whisk mayonnaise, sweet chili sauce, and sriracha until smooth.
-
Assemble bowls – Start with jasmine rice, then layer with chicken, lettuce, cucumber, carrots, and green onions.
-
Finish – Drizzle spicy mayo over the top and sprinkle with sesame seeds. Serve warm.
Notes
Don’t overcrowd the pan when frying—chicken needs space to crisp.
Adjust heat by changing sriracha amounts.
Swap mayo with Greek yogurt for a lighter sauce.
Pre-shredded veggies save time on busy nights.
