Description
Fresh and hearty balsamic steak salad with grilled corn, Gorgonzola cheese, fresh greens, and homemade gremolata.
Ingredients

- 1 pound sirloin steak
- 2 tablespoons balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- 1/2 teaspoon coarse salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 4 ounces Gorgonzola cheese, crumbled
- 2 heads endive lettuce, chopped
- 6 cups mixed spring greens
- 1 corn on the cob
- 1 tablespoon olive oil
- 2 tablespoons basil, minced
- 2 tablespoons parsley, minced
- 1 garlic clove, minced
- 1 tablespoon lemon zest
- 3 tablespoons balsamic vinegar
- 1/2 cup olive oil
- 1/2 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Whisk together marinade ingredients and marinate steak for 30 minutes.
- Mix basil, parsley, garlic, and lemon zest to make gremolata.
- Preheat grill or grill pan over medium-high heat.
- Drizzle corn with olive oil and grill until lightly charred.
- Slice kernels from the cooled corn cob.
- Grill steak 4 to 5 minutes per side for medium-rare.
- Rest steak for 5 minutes and slice against the grain.
- Whisk together balsamic vinaigrette ingredients.
- Toss greens, vegetables, cheese, corn, half the dressing, and half the gremolata.
- Top salad with sliced steak and drizzle with remaining dressing and gremolata.
