Ingredients
2 cups minus 2 tablespoons cake flour (228g)
1 2/3 cups bread flour (217g)
1 1/4 teaspoons baking soda (5g)
1 1/2 teaspoons baking powder (6g)
1 teaspoon salt (6g)
1 1/4 cups salted butter softened (10 oz)
1 1/4 cups light brown sugar (275g)
1 cup plus 2 tablespoons white granulated sugar (226g)
2 large eggs
2 teaspoons vanilla extract (10g)
1 cup shaved or chopped dark chocolate (146g)
1 1/2 cups dark chocolate chips (267g)
1/4 cup white granulated sugar
sea salt for sprinkling
Instructions
1. Plan ahead and chill dough 24 hours.
2. Sift flours, soda, baking powder, and salt.
3. Cream butter and sugars. Add eggs and vanilla.
4. Mix in dry ingredients until combined.
5. Stir in chocolates.
6. Wrap dough and refrigerate 24–36 hours.
7. Preheat oven to 350°F.
8. Scoop 1.5–2 inch dough balls.
9. Press tops gently with sugar-dipped glass.
10. Bake 13 minutes.
11. Sprinkle with sea salt and cool.
Notes
Dough texture improves with a full day of chilling.
