Baked rhubarb fritters are soft, lightly crisp treats made with fresh rhubarb, warm spices, and a sweet vanilla glaze.
Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup Greek yogurt
- 2 tablespoons melted butter or oil
- 1 teaspoon vanilla extract
- 1 1/2 cups chopped rhubarb
- 1 cup powdered sugar
- 1–2 tablespoons milk for glaze
- 1/2 teaspoon vanilla extract for glaze
Instructions
- Preheat oven to 400°F and heat a baking sheet inside
- Mix dry ingredients in a bowl
- Whisk wet ingredients in another bowl
- Combine wet and dry mixtures gently
- Fold in chopped rhubarb
- Scoop batter onto lined sheet and flatten slightly
- Bake 14 to 16 minutes until golden
- Cool briefly and transfer to rack
- Mix glaze ingredients and drizzle over warm fritters
Notes
- Do not overmix batter
- Pat rhubarb dry before adding
- Serve warm for best texture
- Use preheated pan for crisp edges
