Description

Baked rhubarb fritters are soft, lightly crisp treats made with fresh rhubarb, warm spices, and a sweet vanilla glaze.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup Greek yogurt
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups chopped rhubarb
  • 1 cup powdered sugar
  • 12 tablespoons milk for glaze
  • 1/2 teaspoon vanilla extract for glaze

Instructions

  1. Preheat oven to 400°F and heat a baking sheet inside
  2. Mix dry ingredients in a bowl
  3. Whisk wet ingredients in another bowl
  4. Combine wet and dry mixtures gently
  5. Fold in chopped rhubarb
  6. Scoop batter onto lined sheet and flatten slightly
  7. Bake 14 to 16 minutes until golden
  8. Cool briefly and transfer to rack
  9. Mix glaze ingredients and drizzle over warm fritters

Notes

  1. Do not overmix batter
  2. Pat rhubarb dry before adding
  3. Serve warm for best texture
  4. Use preheated pan for crisp edges
