Description

Creamy peaches layered over a soft vanilla crust create a rich and comforting dessert perfect for holidays, potlucks, and summer gatherings.


Ingredients

  • ¾ cup all-purpose flour
  • 1 package cook-and-serve vanilla pudding mix
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 3 tablespoons softened butter
  • 1 large egg
  • 1 can sliced peaches in heavy syrup
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 package softened cream cheese
  • ½ cup granulated sugar

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease a 10-inch deep-dish pie plate.
  2. Whisk flour, pudding mix, baking powder, and salt together in a bowl.
  3. Add milk, butter, and egg, then beat with an electric mixer for 2 minutes.
  4. Spread crust mixture evenly into the prepared pie plate.
  5. Drain peaches and reserve 3 tablespoons syrup.
  6. Mix cinnamon and 1 tablespoon sugar together in a small bowl.
  7. Beat cream cheese until fluffy, then add remaining sugar and reserved syrup.
  8. Arrange peaches evenly over the crust mixture.
  9. Spoon cream cheese mixture over peaches while leaving a 1-inch edge uncovered.
  10. Sprinkle cinnamon sugar over the top.
  11. Bake for 30 to 35 minutes until golden brown.
  12. Cool for 20 minutes and refrigerate for at least 2 hours before serving.

Notes

  1. Drain peaches well before adding them to the pie.
  2. Serve chilled for the best texture.
  3. Store leftovers covered in the refrigerator for up to 4 days.
