Description

Rich, fudgy avocado brownies with crackly tops and deep chocolate flavor. Gluten free and easy to make.


Ingredients

Scale
  • 1 ripe avocado
  • 1 1/4 cups chocolate chips
  • 1/3 cup coconut oil or melted butter
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons brewed coffee
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and line an 8×8-inch pan with parchment paper.
  2. Mash the avocado until smooth.
  3. Melt chocolate chips and coconut oil together until smooth.
  4. Whisk eggs and sugar for 1 to 2 minutes.
  5. Stir in melted chocolate mixture.
  6. Add coffee, vanilla, almond flour, salt, and avocado.
  7. Mix until combined.
  8. Pour batter into pan and bake for 35 to 40 minutes.
  9. Cool completely before slicing into 9 brownies.

Notes

  1. Use hot water instead of coffee if desired.
  2. For nut-free brownies use 1/2 cup all-purpose flour and 2 eggs.
  3. Store at room temperature for up to 2 days.
  4. Freeze for up to 3 months.
