- 1 ripe avocado
- 1 1/4 cups chocolate chips
- 1/3 cup coconut oil or melted butter
- 3 eggs
- 1 cup sugar
- 2 tablespoons brewed coffee
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and line an 8×8-inch pan with parchment paper.
- Mash the avocado until smooth.
- Melt chocolate chips and coconut oil together until smooth.
- Whisk eggs and sugar for 1 to 2 minutes.
- Stir in melted chocolate mixture.
- Add coffee, vanilla, almond flour, salt, and avocado.
- Mix until combined.
- Pour batter into pan and bake for 35 to 40 minutes.
- Cool completely before slicing into 9 brownies.
Notes
- Use hot water instead of coffee if desired.
- For nut-free brownies use 1/2 cup all-purpose flour and 2 eggs.
- Store at room temperature for up to 2 days.
- Freeze for up to 3 months.
