- 1/2 cup butter softened to room temperature
- 1/2 cup packed brown sugar
- 1/4 teaspoon baking soda
- 1 1/4 cups rolled oats
- 3/4 cup all-purpose flour
- 1 cup apricot preserves
- Non-stick cooking spray
Instructions
- Preheat oven to 350 degrees Fahrenheit and spray an 8×8-inch or 9×9-inch baking dish with non-stick cooking spray.
- Combine softened butter, brown sugar, baking soda, rolled oats, and flour in a mixing bowl until crumbly.
- Measure out 2 cups of the oat mixture and press into the bottom of the prepared baking dish.
- Spread apricot preserves evenly over the crust, leaving about 1/4 inch around the edges.
- Sprinkle the remaining oat crumble mixture over the preserves.
- Bake for 30 to 35 minutes until golden brown.
- Cool completely before slicing into bars and serving.
Notes
- Allow the bars to cool completely for cleaner slices.
- Store leftovers in an airtight container for up to 3 days.
- Add chopped nuts for extra texture if desired.
