Description

These Apricot Oatmeal Crumble Bars feature a buttery oat crust, sweet apricot filling, and a crumbly topping for an easy homemade dessert.


Ingredients

  • 1/2 cup butter softened to room temperature
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup all-purpose flour
  • 1 cup apricot preserves
  • Non-stick cooking spray

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and spray an 8×8-inch or 9×9-inch baking dish with non-stick cooking spray.
  2. Combine softened butter, brown sugar, baking soda, rolled oats, and flour in a mixing bowl until crumbly.
  3. Measure out 2 cups of the oat mixture and press into the bottom of the prepared baking dish.
  4. Spread apricot preserves evenly over the crust, leaving about 1/4 inch around the edges.
  5. Sprinkle the remaining oat crumble mixture over the preserves.
  6. Bake for 30 to 35 minutes until golden brown.
  7. Cool completely before slicing into bars and serving.

Notes

  1. Allow the bars to cool completely for cleaner slices.
  2. Store leftovers in an airtight container for up to 3 days.
