Ingredients
1/2 cup (113g) unsalted butter, softened
1 cup (200g) granulated sugar
1/4 cup (50g) brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups (180g) all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 medium apple, peeled and finely diced
Topping:
2 tbsp (25g) granulated sugar
1 tsp ground cinnamon
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in egg and vanilla extract.
4. Whisk together flour, baking powder, salt, cinnamon, and nutmeg.
5. Gradually add dry ingredients to wet ingredients.
6. Fold in diced apple.
7. Spread batter into prepared pan.
8. Mix topping sugar and cinnamon; sprinkle over batter.
9. Bake 25–30 minutes until golden and a toothpick comes out clean.
10. Cool completely before cutting and serving.
Notes
Use firm apples like Granny Smith for the best texture. Store leftovers airtight up to 3 days.
