- 5 medium apples, peeled, cored, and chopped into 1/4-inch cubes
- 1/3 cup packed brown sugar
- 2 tablespoons granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon fresh lemon juice
- 1 cup water
- 2 tablespoons cornstarch
- 8 six-inch flour tortillas
- 1/3 cup granulated sugar
- 1 1/2 teaspoons ground cinnamon
- Nonstick cooking spray, as needed
Instructions
- Stir the diced apples, brown sugar, 2 tablespoons granulated sugar, 2 teaspoons cinnamon, and lemon juice together in a large mixing bowl.
- Transfer the apple mixture to a large skillet or saucepan and add 1 cup water.
- Bring the mixture to a boil, cover the pan, reduce the heat to medium-low, and simmer for about 10 minutes until the apples feel tender.
- Remove 1/2 cup cooking liquid from the pan and whisk it with the cornstarch until smooth.
- Pour the cornstarch slurry into the apples and stir until the sauce thickens.
- Remove the apple dip from the heat and serve it warm or let it cool before chilling.
- Preheat the oven to 350°F.
- Whisk 1/3 cup granulated sugar with 1 1/2 teaspoons cinnamon in a small bowl.
- Spray both sides of each tortilla with nonstick cooking spray and coat both sides with cinnamon sugar.
- Cut each tortilla into 8 wedges and arrange the wedges in a single layer on a baking sheet.
- Bake for 9 to 12 minutes until golden and crisp, working in two batches when needed.
- Transfer the chips to a wire cooling rack, cool completely, and serve with the apple dip.
Notes
- Use firm apples such as Granny Smith, Fuji, Honeycrisp, or Braeburn so the pieces hold their shape.
- Taste the filling and add a little more sugar when using very tart apples.
- Brush the tortillas with melted butter instead of cooking spray for a richer flavor.
- Store the apple dip in an airtight container in the refrigerator for 3 to 4 days.
- Store the cooled tortilla chips separately in an airtight container at room temperature.
- Reheat the dip slowly on the stovetop and add a teaspoon of water when it becomes too thick.
- Serve the apple mixture over vanilla ice cream, pancakes, waffles, cheesecake, or pound cake.
