Description

Ingredients

  • Graham cracker crumbs – 1 cup

  • All-purpose flour – 1/4 cup

  • Cold butter, cubed – 3 tablespoons

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with liners.
  2. Mix graham cracker crumbs, melted butter, and sugar until combined.
  3. Press the mixture firmly into the bottom of each liner and pre-bake for 5 minutes.
  4. Beat cream cheese until smooth, then mix in sugar, egg, and vanilla just until combined.
  5. In a saucepan, cook diced apples with brown sugar, cinnamon, and lemon juice until slightly softened.
  6. In a bowl, mix oats, flour, brown sugar, cinnamon, and cold butter until crumbly.
  7. Spoon cheesecake filling over the baked crusts.
  8. Top with cooked apples, then sprinkle with the oat crumble.
  9. Bake for 18–22 minutes until the centers are just set.
  10. Cool completely, then refrigerate for at least 2 hours before serving.
