- 2 medium baking apples, peeled, cored, and chopped
- 1/2 cup packed light brown sugar
- 2 heaping teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 large egg, at room temperature
- 1/3 cup granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup full-fat sour cream, at room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract for the glaze
- 3 tablespoons milk
Instructions
- Preheat the oven to 350°F and coat an 8-by-4-inch or 9-by-5-inch loaf pan with nonstick baking spray.
- Combine the chopped apples, brown sugar, cinnamon, and ginger in a medium bowl, then set aside.
- Whisk the egg, granulated sugar, vegetable oil, sour cream, and vanilla in a large bowl until smooth.
- Whisk the flour, baking soda, and kosher salt together in a separate bowl.
- Add the dry ingredients to the wet mixture and stir gently until almost combined.
- Fold three-quarters of the cinnamon apple mixture into the batter.
- Pour the batter into the prepared loaf pan and spread it evenly.
- Spoon the remaining cinnamon apples over the top.
- Bake for 50 to 55 minutes, or until a toothpick comes out clean and the center reaches approximately 200°F.
- Cool the bread in the pan for at least 30 minutes, preferably one hour.
- Whisk the powdered sugar, vanilla, and milk until smooth.
- Remove the cooled loaf from the pan and drizzle it generously with the vanilla glaze before serving.
Notes
- Use firm baking apples such as Granny Smith, Honeycrisp, Pink Lady, or Empire.
- Measure flour by spooning it into the measuring cup and leveling the top.
- Avoid overmixing the batter after adding the flour.
- Cool the loaf before glazing so the icing stays on the surface.
- Store wrapped bread at room temperature for two days or refrigerate it for up to one week.
- Freeze the tightly wrapped loaf in a freezer-safe bag for up to three months.
- Thaw the wrapped loaf on the counter overnight before serving.
