  • 227 grams all-purpose flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 1/2 cups grated zucchini

Instructions

  1. Preheat oven to 350°F and prepare loaf pan with grease and parchment paper.
  2. Whisk flour, baking powder, baking soda, cinnamon, and salt in a bowl.
  3. Whisk brown sugar, granulated sugar, oil, vanilla, and eggs in a separate bowl.
