Description

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 medium red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1 pinch black pepper
  • 1 package fully cooked chicken sausage, 12 ounces, sliced into 3/4-inch rounds
  • Cooking spray, for the air fryer basket

Instructions

  1. Wash and dry the bell peppers, red onion, and zucchini. Cut the vegetables into evenly sized 1-inch pieces.
  2. Place the chopped vegetables in a large bowl. Drizzle them with avocado oil and toss until lightly coated.
  3. Mix the garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper in a small bowl.
  4. Sprinkle the seasoning mixture over the vegetables and toss well.
  5. Add the sliced chicken sausage to the bowl and toss until everything receives an even coating of oil and seasoning.
  6. Preheat the air fryer to 390°F when required by your model. Lightly coat the basket with cooking spray.
  7. Arrange the sausage and vegetables in a loose, even layer. Cook in batches when necessary.
  8. Air fry at 390°F for 10 minutes. Shake the basket or turn the ingredients halfway through cooking.
  9. Check the vegetables for tenderness and the sausage for browned edges. Cook for another 1 to 2 minutes when needed.
  10. Transfer the sausage and vegetables to a serving bowl and serve immediately.
