- 2 pounds fresh peaches, rinsed and dried
- 1 pound ripe tomatoes, diced
- 1 small bunch cilantro, finely chopped
- 1/3 cup red onion, minced
- Juice of 1 lime
- 1 jalapeño, seeded and minced
- 1/2 teaspoon salt
- Ground black pepper, to taste
Instructions
- Wash and dry the peaches thoroughly before slicing them into quarters around the pit.
- Remove the peach slices from the pit and dice them into small cubes before adding them to a large bowl.
- Dice the tomatoes evenly and finely chop the cilantro, red onion, and jalapeño.
- Add the tomatoes, cilantro, onion, jalapeño, lime juice, salt, and black pepper to the peaches.
- Stir gently until all ingredients combine evenly.
- Cover and refrigerate the salsa for about 15 minutes so the flavors blend together.
- Taste and adjust the seasoning before serving.
- Serve with tortilla chips, tacos, grilled fish, or grilled chicken.

- Leave jalapeño seeds intact for a spicier salsa.
