Description

These 5-Ingredient Beef Enchiladas are a quick, comforting dinner made with ground beef, salsa, enchilada sauce, tortillas, and cheese.


Ingredients

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10-ounce) can red enchilada sauce
  • 8 (8-inch) tortillas
  • 1 (8-ounce) package shredded four-cheese Mexican blend

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
  2. Brown ground beef in a skillet over medium-high heat, drain fat, then stir in salsa and heat through.
  3. Spread half of the enchilada sauce in the baking dish.
  4. Fill warmed tortillas with beef mixture and cheese, roll tightly, and place seam side down in the dish.
  5. Top with remaining sauce and cheese, cover with foil, and bake for 30 to 35 minutes.

Notes

  1. Flour tortillas stay softer and roll more easily.
  2. Warm tortillas before filling to prevent cracking.
  3. Let enchiladas rest a few minutes before serving.
