Description

Golden tuna cottage cheese patties made from pantry staples. Quick, affordable, and packed with protein for an easy lunch or dinner.


Ingredients

  • 2 cans tuna in water, drained
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Drain the tuna thoroughly and place it in a large bowl.
  2. Add cottage cheese, eggs, breadcrumbs, onion, parsley, and seasonings.
  3. Mix until fully combined and the mixture holds together.
  4. Heat olive oil in a skillet over medium heat.
  5. Form the mixture into patties and place them in the skillet.
  6. Cook about 4 minutes per side until golden and cooked through.

Notes

  1. Serve with ketchup, yogurt sauce, or a simple salad.
  2. Leftovers reheat best in a skillet over low heat.
