Ingredients
Scale
For the Garlic Butter:
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- ½ tsp salt
For the Sandwich:
- 8 medium shrimp, peeled, deveined, and cooked
- 4 slices of bread (sourdough or Texas toast works best)
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 1 tbsp olive oil
- ½ tsp red pepper flakes (optional)
Instructions
- Make the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, chopped parsley, and salt.
- Cook the Shrimp: Heat olive oil in a pan over medium heat. Add the shrimp and cook for about 2 minutes per side until pink and opaque. If desired, sprinkle with red pepper flakes for a spicy kick. Remove from heat and chop into bite-sized pieces.
- Assemble the Sandwiches: Spread garlic butter on one side of each bread slice. On the non-buttered side, layer mozzarella, shrimp, cheddar cheese, and then another layer of mozzarella. Top with another slice of bread, buttered side facing outward.
- Grill the Sandwiches: Heat a skillet over medium-low heat. Place the sandwiches in the pan and cook for about 3–4 minutes per side until the bread is golden brown and crispy, and the cheese is melted.
- Serve & Enjoy: Slice in half and serve hot! Pair with marinara sauce or a simple side salad for extra flavor.
Notes
- Swap mozzarella for Gruyère or provolone for a different flavor profile.
- Use pre-cooked shrimp to save time.
- Air-fry at 375°F for 6–8 minutes for a crispy alternative.
