Description

This Rustic Country French Garlic Soup is a cozy, creamy bowl of comfort inspired by the French countryside. Made with slow-roasted garlic, sweet onions, and fresh thyme, it captures rustic elegance in every spoonful. Velvety smooth and deeply aromatic, this nourishing soup is perfect for chilly evenings, elegant dinners, or anytime you need a soothing, immune-boosting meal that warms you from the inside out.


Ingredients

  • 10 garlic cloves (about 50 g), whole and unpeeled

  • 1 large yellow onion (about 150 g), chopped

  • 4 cups (960 ml) vegetable or chicken broth

  • 1 cup (240 ml) heavy cream

  • 1 tbsp (15 ml) olive oil

  • 45 sprigs fresh thyme (or 1 tsp dried thyme)

  • 1 small baguette or 4 slices crusty bread (about 150 g), for serving

  • Salt and black pepper, to taste

  • Fresh herbs or croutons, for garnish


Instructions

  • Roast the Garlic: Preheat oven to 400°F (200°C). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 30 minutes until golden and soft.

  • Sauté the Aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add onions and cook 5–7 minutes until translucent and fragrant.

  • Add Broth and Herbs: Squeeze roasted garlic from skins into the pot. Add broth and thyme. Stir and bring to a gentle simmer.

  • Simmer: Let the soup simmer for 15–20 minutes to develop flavor.

  • Blend: Remove thyme sprigs. Puree the soup using an immersion blender (or in batches in a regular blender) until smooth.

  • Add Cream & Season: Return soup to the pot, stir in heavy cream, and season with salt and black pepper.

  • Serve: Ladle into bowls and top with fresh herbs or croutons. Serve with slices of warm baguette.

Notes

Roast onions along with garlic for an extra caramelized depth of flavor.

For a lighter version, use half-and-half or milk instead of heavy cream.

Substitute rosemary or a bay leaf if thyme isn’t available.

To adjust thickness, add extra broth for a thinner consistency.
