Ingredients

  • ½ cup (100 g) white sugar

  • ¼ cup (55 g) brown sugar

  • ½ cup (115 g) butter or shortening

  • 1 large egg

  • 1 cup (125 g) all-purpose flour

  • ½ tsp salt

  • ½ tsp baking soda

  • ¼ tsp vanilla extract

  • ½ tsp cream of tartar

  • Additional white sugar for rolling


Instructions

  • Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

  • Cream white sugar, brown sugar, and butter until fluffy.

  • Beat in egg and vanilla.

  • In a separate bowl, whisk together flour, salt, baking soda, and cream of tartar.

  • Gradually add dry ingredients to the wet mixture to form dough.

  • Scoop dough into balls and roll in extra white sugar.

  • Place on baking sheet about 5 cm apart. Do not flatten.

  • Bake for 12 minutes until edges are set and centers remain soft.

  • Cool on sheet for 5 minutes, then transfer to a wire rack.

Notes

Do not overbake for maximum chewiness.

Butter gives more flavor, shortening yields a softer texture.

Optional: roll in coarse sugar or add cinnamon for extra flair.

Freezes well—perfect for make-ahead treats.
